The explanation below is what is offered for this technique. CleaningHQ has not found evidence establishing that this is what actually happens, and says so rather than presenting a plausible story as a finding.
Most cooking soil dries and waits, so deferring it costs only effort. Acidic spills behave differently: an acid in prolonged contact with a coated or enamelled finish attacks it rather than resting on it, and the result is a colour change in the surface. The manufacturer states the outcome without describing the chemistry, and CleaningHQ does not supply a mechanism it does not give.

A splash of sauce on an oven door looks like something to deal with at the weekend. The manufacturer singles out one category and asks for a different response: spillage of marinades, fruit juices, tomato sauces and basting materials CONTAINING ACIDS may cause discolouration and should be wiped up immediately, with the surface cleaned and rinsed once cool. The distinction being drawn is between soil and damage. Most of what lands on an appliance is a deposit that will still be a deposit next week; an acidic spill is reacting with the finish while it sits there, and what it leaves behind is a changed surface rather than a mark on it. Discolouration is not something a later, more determined clean removes. Two practical points follow. The wait for the surface to cool is part of the instruction rather than a caveat, because these spills land on hot appliances.
