The one context where cleaning and disinfecting are two operations in a fixed order, and where the surface is also a food-contact surface.

A kitchen changes three things about an ordinary cleaning answer. First, ORDER BECOMES A REQUIREMENT rather than a preference: soil must be removed before any sanitiser or disinfectant, because a disinfectant applied to a dirty surface is spent on the dirt, and the trade guidance in this register states plainly that products used for soil and stain removal may not be effective disinfectants and products that disinfect may not be effective for soil removal. Second, RESIDUE MATTERS MORE than it does elsewhere, because what is left on a worktop can reach food; rinsing stops being cosmetic. Third, GREASE IS THE DEFAULT SOIL and it arrives hot and aerosolised, which is why the extractor hood, the hob surround and the wall above the cooker are one problem rather than three. Two constraints run against the instinct to escalate. Alkalinity is the obvious answer to grease and attacks aluminium, which is what most extractor mesh filters are made of. And a stainless surface used for food preparation should be washed afterwards for a reason that is not hygiene alone: the trade body records that salt added during cooking, and concentrated salt-and-vinegar mixtures, may pit the steel over time.

What this setting actually gets

  • Grease Fats and oils, which water alone cannot lift. Removed by surfactants, by heat, by solvents, or by alkalis that convert the fat into soap.

What suits it here

Recorded as appropriate to this setting rather than cleared on a material. Suitability in a place and safety on a surface are separate questions, and both have to pass before anything is recommended.

  • Two-stage degreasing

    A solvent pass followed by a detergent pass. Each finishes what the other cannot, and the trade documentation says so in one sentence.

  • Neutral cleaning

    The default that four separate trades converge on independently: a neutral detergent, warm water, a soft tool and a thorough rinse.

  • Two-stage disinfection

    Clean first, disinfect second, and leave it wet for the time on the label. Almost every household version of this skips one of the three, and each omission stops it working.

  • Cellulose sponge

    The most-handled cleaning tool in a kitchen and the one that holds the most moisture and food. Cleaning it is possible; the evidence stops short of eliminating what is in it.
