In detail

Oven cleaner is a shelf rather than a chemical, but the shelf is unusually uniform: the aggressive products are built on sodium or potassium hydroxide, sometimes with a solvent and a thickener so the gel stays on a vertical surface. The mechanism is saponification. Baked-on cooking residue is largely polymerised fat, and a strong alkali converts fat into soap, which then rinses. That is why the products work where a detergent does not, and it is also why they are hazardous: the same reaction happens to skin. The material consequences follow from the chemistry rather than from the brand. Caustic alkalis attack aluminium, zinc and galvanised steel, releasing hydrogen and leaving a dulled, pitted surface that cannot be restored — which rules the products out on aluminium trays, pan bases and trim. They damage painted and enamelled finishes and can craze plastic control panels. And the appliance maker's own prohibition outranks everything here: a range manual read for this catalogue forbids commercial oven cleaner on a self-cleaning oven interior, on the door gasket, and on the grill pan and grid.
