Burnt-on residue is what remains when food is heated past the point where its fats polymerise and its sugars and proteins char, leaving a hard carbonised layer keyed into the surface texture. It is genuinely different from ordinary grease, because the material has been chemically changed and no longer responds to the surfactants that would have lifted it before it was heated. The trade guidance for stainless steel treats it as a contact-time problem rather than a force problem: pre-soak in hot water with detergent, then work the softened deposit with a nylon brush, repeating if necessary, and finish with routine cleaning. The reason the sequence is ordered that way is stated plainly in the same document — abrasive scouring powder can leave scratch marks on polished surfaces, so it is what you resort to after soaking has failed rather than what you start with. On a directional finish the scratch risk compounds, because marks made across the grain cannot be blended out. The general principle transfers well beyond stainless steel: where a deposit will not dissolve, extending contact time is the variable to increase before increasing force.

When the obvious answer is wrong
Can I use oven cleaner on the burnt-on mess in my self-cleaning oven?
The manufacturer prohibits it in absolute terms: no commercial oven cleaner or oven liner protective coating of any kind should be used in or around any part of the oven. The mechanism is delayed rather than immediate. RESIDUE FROM OVEN CLEANERS WILL DAMAGE THE INSIDE OF THE OVEN WHEN THE SELF-CLEAN CYCLE IS USED — so the harm happens later, at pyrolytic temperature, to whatever the cleaner left behind. Someone who sprays, wipes and sees nothing wrong has not shown the practice is safe; they have postponed the test. The same guide notes that even soap left on the liner causes additional stains when the oven is heated.
A different kind of treatment works: Use the mechanism the appliance already has. The manufacturer's own procedure is the self-clean cycle itself: remove the broiler pan, grid and other cookware first, wipe up excess spillage before starting, and afterwards wipe the white ash away with a damp cloth once the oven has cooled. Clean only the parts the guide lists. The door needs three different treatments and they must not be confused — the gasket is not cleaned at all, because it is essential to the seal and must not be rubbed, damaged or moved; the area outside the gasket may take a scouring pad; and the door exterior must not meet oven cleaners, cleansing powders or harsh abrasives. Where a spill is bad enough to want chemistry between cycles, the honest answer from this guidance is to wipe up spillage promptly instead, because the cycle is the cleaning method the oven was designed around.
Can I leave a cast iron pan to soak to get the burnt-on food off?
Cast iron is bare iron protected by a layer of polymerised oil, and that protection is defeated by water rather than by scrubbing. The manufacturer's wording is blunt: SOAKING CAST IRON IN WATER IS A RECIPE FOR RUST. It extends the same warning to cookware left in the sink to soak, put in the dishwasher, allowed to air dry, or left in a moisture-prone environment — and states that a dishwasher will remove the seasoning and likely cause rust. The failure is not the burnt food coming off. It is that the pan is left in prolonged contact with the one thing its finish exists to keep off it.
A different kind of treatment works: Substitute mechanical action for time, and then remove the water immediately. The manufacturer's routine is three steps: wash with warm soapy water, scrubbing with a stiff-bristled brush or a scrubbing pad; dry COMPLETELY with a paper towel or lint-free cloth; then add a thin layer of oil distributed over the entire surface. Note what is permitted, because it contradicts the folklore that grew up around this pan: soap is explicitly fine, on the stated ground that dish detergent today is no longer strong enough to remove seasoning, and it prevents build-up. Air drying is not an option — it is listed alongside soaking and the dishwasher as a way to get rust. Where rust has already formed, steel wool or a metal scrubber is acceptable to remove it, though not for daily cleanup. This damage is recoverable in a way most conflicts in this catalogue are not: a rusted pan can be scoured back and re-seasoned.
