Sodium hydroxide is what makes oven cleaner and most caustic drain cleaner work. It removes baked-on fat by saponification — converting the fat into a soap that can be rinsed away — which is why it succeeds where detergent fails on polymerised oven soil. Its hazards are not incidental to that mechanism but the same mechanism. A substance that hydrolyses fats hydrolyses skin, and the health authority's fact sheet describes it as corrosive, capable of severe skin and eye burns on contact, with eye exposure able to cause permanent damage. It generates heat when it dissolves in water and reacts with several metals. The material restrictions follow from its strength: it attacks aluminium, which is amphoteric and dissolved by strong base; it destroys protein fibres such as wool and silk; and it damages paint, some anodised finishes and the resin binder in engineered stone. When the obvious answer is wrong
Can I use oven cleaner on the burnt-on mess in my self-cleaning oven?
The manufacturer prohibits it in absolute terms: no commercial oven cleaner or oven liner protective coating of any kind should be used in or around any part of the oven. The mechanism is delayed rather than immediate. RESIDUE FROM OVEN CLEANERS WILL DAMAGE THE INSIDE OF THE OVEN WHEN THE SELF-CLEAN CYCLE IS USED — so the harm happens later, at pyrolytic temperature, to whatever the cleaner left behind. Someone who sprays, wipes and sees nothing wrong has not shown the practice is safe; they have postponed the test. The same guide notes that even soap left on the liner causes additional stains when the oven is heated.
A different kind of treatment works: Use the mechanism the appliance already has. The manufacturer's own procedure is the self-clean cycle itself: remove the broiler pan, grid and other cookware first, wipe up excess spillage before starting, and afterwards wipe the white ash away with a damp cloth once the oven has cooled. Clean only the parts the guide lists. The door needs three different treatments and they must not be confused — the gasket is not cleaned at all, because it is essential to the seal and must not be rubbed, damaged or moved; the area outside the gasket may take a scouring pad; and the door exterior must not meet oven cleaners, cleansing powders or harsh abrasives. Where a spill is bad enough to want chemistry between cycles, the honest answer from this guidance is to wipe up spillage promptly instead, because the cycle is the cleaning method the oven was designed around.
