Why it works
Heat raises reaction rates and improves the solubility of most soils, which is why hot water genuinely does clean better in the general case. Protein is the exception: raising the temperature denatures it, and a denatured protein binds to the substrate rather than dissolving off it. The mechanism that helps everywhere else is the mechanism that causes the damage here, and it is irreversible.
Background
Almost everything else in cleaning improves with heat, which is why this exception catches people. Blood is a protein soil, and heat denatures protein: the molecule unfolds and binds to the fibre in a way that no subsequent washing reverses. A blood stain rinsed in hot water is not a blood stain that took longer to remove, it is a blood stain that is now permanent. The carpet trade's guidance for blood is to rinse the spot quickly with COOL water, and the same principle governs fabric. The general spot procedure applies alongside it — blot with a dry white absorbent cloth, work any solution in gently from the edges of the spill towards the centre rather than rubbing, keep going while the stain is still transferring — but the temperature instruction is the one that decides the outcome. This is also the clearest case in the catalogue for acting immediately being worth more than acting well: cold water applied at once outperforms any product applied later.
