In detail
A new board and a well-used one are not the same cleaning problem, and the difference is entirely in this surface. Knife work opens grooves, the grooves hold soil and moisture, and a cloth rides straight over them — which is why both extension sources independently specify a BRUSH rather than a cloth. Porosity decides the rest. One service reports that microorganisms can become trapped in wooden surfaces and are difficult to dislodge by rinsing, while organisms on plastic boards were more easily washed off; the other says wood can absorb moisture and bacteria if not properly maintained, calls bamboo less porous than most wood, and places glass, marble and stone in the non-porous group at the cost of dulling knives. Neither declares a winner and both describe the same asymmetry. The surface is also what decides when the board stops being cleanable. Deep grooves, cracks and excessive wear mean it can no longer be cleaned effectively, and at that point the answer is replacement rather than a better method.
