Why it works

That both are white alkaline powders sold for baking and therefore behave alike. They do not: baking powder is bicarbonate combined with a dry acid salt and a starch, so wetting it neutralises the alkalinity that bicarbonate contributes and leaves a starch residue behind, while diluting the abrasive fraction.

Background

Observed as an ERROR in cleaning instructions more often than as a question, which is why it earns a record. Bicarbonate of soda is a single substance: a mild alkali that is also a fine, soft abrasive, and this register holds both properties. Baking powder is a mixture — bicarbonate PLUS a dry acid salt PLUS a starch filler, formulated so that water starts a reaction producing carbon dioxide. That formulation is what makes it useless as a substitute. The alkalinity goes first. The acid in the powder exists to consume the bicarbonate and does so as soon as the mixture is wetted — the same neutralisation this catalogue refutes when people pour vinegar onto bicarbonate, sold pre-mixed. Whatever alkaline help bicarbonate would have given is spent on the acid beside it. The abrasive is diluted too: only part of the powder is bicarbonate, the rest being filler. And the starch is a residue — a soil-attracting film, and this register records residue as a cause of things getting dirty faster after cleaning. So the substitution is weaker on both of bicarbonate's mechanisms and adds a third problem. If a recipe calls for bicarbonate, that is what it means.

  • Mild cream cleanser A liquid carrying a fine soft abrasive. The trade answer for water marks and light staining on stainless steel — and not the same thing as scouring powder.
  • Detergent A surfactant-based cleaner. The general-purpose answer for greasy and particulate soil, and the correct first choice far more often than any specialist product.
