The explanation below is what is offered for this technique. CleaningHQ has not found evidence establishing that this is what actually happens, and says so rather than presenting a plausible story as a finding.
That enzymes in the product catalyse the breakdown of the residues left by urine into smaller compounds that can be rinsed or that no longer smell, rather than merely diluting and masking them as a detergent would. The mechanism is real for the soils it is evidenced against — a protease genuinely does cut protein — and the claim extends it to urine by treating all organic soil as one category.

Enzyme cleaners are marketed for pet urine more heavily than for anything else, and the reasoning is always the same: enzymes digest the stain. But enzymes are not a general solvent for organic mess — they are catalysts, and each class cuts ONE kind of molecule. The evidence this register holds covers proteases acting on the proteins in blood and sweat, lipases on fats, amylases on starches.
