The oven cavity is where baked-on carbon actually is, and it is the part of the appliance most often treated as though it were the whole appliance. Its routine method is modest: a mixture of liquid detergent or all-purpose cleaner and water, applied with a soft sponge. One instruction attached to it is worth more than the method. Do not line the oven bottom with foil or a liner. It is a widespread habit intended to save cleaning, and it obstructs heat distribution and can damage the surface beneath — so the thing done to avoid cleaning the cavity is a common cause of damaging it. The cavity is also where the self-clean cycle acts, and where commercial oven cleaners are least appropriate: this catalogue records separately that such chemicals are not advisable on self-cleaning interior surfaces.
