In detail
A ceramic or induction hob's cooking surface is glass-ceramic — chemically robust, hard, and vulnerable in exactly two ways. The first is abrasion. A hob face carries printed markings and a smooth finish, and steel wool, scouring pads and gritty creams leave a permanent haze; a scraper held flat at the angle the manufacturer specifies is the intended tool for anything bonded. The second is thermal and chemical together. Sugar is the exception to every other rule about hobs: a sugary spill must be removed while the surface is still warm, because as it cools it bonds to the glass-ceramic and can pit the surface when it is heated again. Everything else waits until the hob is cold. The cooker manufacturer's guidance for the surrounding enamel adds the rule most permanent hob marking comes from — the finish is acid-resistant rather than acid-proof, so fruit juice, tomato or vinegar must not be left on it, and acid spilled on a hot surface is wiped dry at once and washed only after cooling. Metal and painted parts of the same appliance take no steel wool, abrasive, ammonia or oven cleaner at all.
