A hob concentrates every difficult cleaning condition in one place: high heat, spilled fat, sugar that carbonises, and acidic foods that boil over. The manufacturer's guidance for a porcelain enamel cooking surface draws a distinction most owners have never heard: the enamel is acid-resistant, which is not acid-proof. Fruit juice, tomato or vinegar should not be permitted to remain on the finish, and acid spilled on a hot surface must be wiped dry at once and washed only after the surface has cooled. That single instruction explains most permanent hob marking, which is dulled patches where something acidic sat and was heated. The same manual excludes steel wool, abrasives, ammonia and oven cleaner from metal and painted surfaces. Glass-ceramic hobs add their own constraints: a spill containing sugar must be removed while the surface is still warm because sugar bonds to the ceramic as it cools, and the manufacturer normally supplies a scraper held at a specified angle for what remains. Induction hobs are glass-ceramic too, with the practical advantage that the surface is heated only by the pan, so a spill is less likely to bake on.
